Medi For All Tips:

  • Use regular versions of tomato paste, broth, and canned beans, if that's what you have, rather than buying new low-sodium versions.

  • If you don't need this dish to be vegan, use chicken broth if that's what you have, rather than buying vegetable broth.

  • Use drained canned chopped tomatoes rather than sun-dried tomatoes, for a more affordable option.

  • Look for lentils in the bulk section of your grocery store, so that you can buy only what you need.

  • Add in any other fresh vegetables that you need to use - celery, green beans, zucchini or squash, and chopped hearty greens like chard and collard greens would be great additions. Add spinach or kale towards the end of cooking time, as they don't need to cook for a long time.

  • This soup will freeze very well, so make a double batch and freeze if you like it!
