Edamame, Pea, and Egg Breakfast Tortilla

Source: Oldways

Medi For All Tips:

  • Find pre-shelled edamame in the freezer section of your grocery store.

  • If you do not have a food processor or high-powered blender, you can use a masher to mix the hummus ingredients together. The texture will be chunkier than if using an appliance.

  • Make a double batch of the hummus and use as a sandwich spread or dip for vegetables.

  • Use gluten free tortillas or other wraps to make this recipe gluten free.
