As noted in the recipe, this soup can be super flexible - feel free to add any other vegetables you want, just know that you may need to simmer longer to ensure all vegetables are tender.
Although not "classic" minestrone, add in a cooked whole grain like brown rice, whole wheat pasta, farro, etc., for a true one pot meal.
This soup should freeze very well. Make a double batch and freeze half for future meals.
