Medi For All Tips:

  • To save money, use mature spinach instead of baby spinach - just remove the stems, which are not as tender as the leaves.

  • Or, substitute frozen spinach in place of fresh. Thaw and wring out moisture very well before using.

  • Leave out zucchini if it's too expensive or hard to find/out of season.

  • This recipe can be gluten free if you confirm your frozen hash browns are gluten free (check ingredient lists carefully!).
