  • Or, make your own using this easy recipe from Budget Bytes.

  • If you won't use the leftover bell pepper, buy one bell pepper and dice up the whole pepper, rather than use part of two different colored peppers.

  • Tomatoes, cilantro, and radishes are optional but a great way to add additional vegetables to your meal.

  • Use full fat cheese if that's what you have or prefer.

  • Serve with brown rice or corn or whole wheat tortillas to bulk up this meal!
